Infused Sweet Corn on the Cob E-mail

cornInfused Sweet Corn on the Cob

Ingredients:

  • 6 ears of fresh sweet corn in the husks
  • 1/4 cup sugar
  • 1 tsp salt
  • 1 slick of salted butter

Peal off the outer-most leaves from each husk, then cut of the top (just above where you can feel the end of the ear), and the bottom stem, about 1 inch below the base of the cob.

In a large pot, or dutch oven, place about 4 cups of warm water, and dissolve in the sugar and salt for form a solution.  Place all six ears of corn in the pot, then fill to about 1 inch of the top of the pot with more warm water.  Place a lid on the pan, being sure that all of the ears are submerged, and set aside to soak for about for about 2 to 3 hours.

 

After the soak, bring to a boil or 15-20 minutes.  Turn off the heat, then move the corn from the water onto a large plate.  It will keep its heat as you prepare the rest of your dinner.  When ready to serve, just peel the husks with the aid of a towel so you don't burn yourself.

 

Use the stick o butter for rolling your ears of corn.
