OK, let me preface this recipe by pointing out that it was SUPPOSED be for Eggplant Timbale, but... my kids had a slightly different meal in mind for the evening, and were very emphatic about getting their way. So instead of the Eggplant Timbale recipe, we'll give you the breakdown for:
Grilled Cheese Sandwiches - without the Grill

This recipe is also suitable for kids to prepare, with adult supervision. You'll need to have access a toaster and microwave, but there's no need for a hot pan, or sharp knife.
Ingredients:
- 4 slices of white or wheat bread
- 4 slices of your choice of cheese
Toast four slices of bread to taste. When done, immediately place two slices of cheese on a single piece of toast (while it's hot), then put the second piece of toast on top of the cheese.
Next, microwave each sandwich on "High" for 30 seconds. When done, remove from the microwave and eat. Be careful! The cheese may be hot!
That's pretty much it. Easy huh? In my case, a bit painful, but you'll have to watch the video to see why.
